“Kakavia,” a traditional Greek fish soup
Ingredients:
1 1/2 fresh fish
3 potatoes
1.5 onions
Olive oil
Salt
Pepper
Preparation:
Clean the fish thoroughly.
Peel and cube the potatoes.
Peel the onions.
Season the fish with salt and pepper.
Instructions:
In a large saucepan, place the cubed potatoes and sliced onions at the bottom.
Arrange the seasoned fish on top of the potatoes and onions.
Add enough water to cover the fish.
Drizzle olive oil over the fish.
Bring the mixture to a boil over medium heat.
Cooking:
Once it’s boiling, reduce the heat to a simmer.
Allow it to simmer for about half an hour or until the fish is cooked through, and the oil settles at the bottom of the pan.
Serving:
To serve, place a plate over the Kakavia to drain the fish and vegetables.
Collect the juices in a separate bowl; these can be used as a sauce to accompany your fish.
Arrange the fish, potatoes, and onions in a baking dish.
Pour the collected juice/sauce over the fish and vegetables.
Your meal is now ready to be enjoyed.
